Emulsion fat products are a promising direction for the enrichment of unsaturated groups with fatty acids. This is possible by introducing rarely used types vegetable oils into formulations these products. Due to fact that acid composition differs depending on properties raw materials from which it produced, there need its analysis more accurate formulation emulsion product. As result conducted studies, 17.3% saturated acids and 83% unsaturated, respectively, were found in pumpkin oil. Pumpkin oil rich monounsaturated acids, such as oleic (47%). Chromatographic study showed ginger contains 9.7% about 90.3% Linolenic turned out be most (32.6%). It was sample black cumin 21.9% 78.1% Most all linoleic (about 56.9%).
